3. Instructions

• Soak rice and lentils

4. Grind the batter

After soaking the dal and rice, mix both in a bowl and then grind it. After blending in a food processor, put it in a large bowl cover it, and keep it in a slightly warm area. Bake for 8-10 hours. In winter you may have to keep it for 15-20 hours.

5. Make Dosa

Heat a cast iron pan. When the pan becomes hot, spread ¼ to ½ teaspoon oil all over the pan with a spoon or with a thick paper towel dipped in oil. For a richer taste, you can cook the dosa with ghee or butter.

Using a ladle, pour a small amount of batter in the center of the pan. Quickly spread it in a circular motion to form a thin, even layer. Place it on medium heat and cook until bubbles appear.

It will automatically rise from the sides and turn golden brown in the center. You can then flip it over with the help of a spatula and cook it a little on the other side. Remove the dosa from the pan and serve on a plate. Serve with sambhar and coconut chutney.
