Mustard oil, 200 ml
Kashmiri red chili powder, 2 tbsp.

Jaggery (ground) 200 grams

Method of making delicious Galgal pickles

Step 1: First of all, heat 5–6 cups of water in a large vessel. When the water starts boiling, add the whole galgals and boil for 5 minutes. After this, filter the water, wipe the galgal with a kitchen towel, and dry it well.

Step two: Now, cut the galgal into 1-inch pieces and remove their seeds. Also, wash and wipe the green chillies; remove the stalk and cut them into 1-inch pieces.

Step three: Heat mustard oil in a pan on medium flame. When the oil is well heated, remove the pan from the flame and allow it to cool for 10 minutes. Then, add Kashmiri red chili powder, turmeric powder, asafoetida, celery, fenugreek seeds, black salt, normal salt, and jaggery, and mix well.

Step four: Add chopped galgal and green chillies to the spice oil and mix well.

Cook the pickle in the sun: Fill the prepared pickle in a clean and dry glass jar and keep it in the sun for 15-20 days. When the color of the pickle becomes dark and the galgal becomes a little soft, then understand that your galgal pickle is ready. Serve it with any favorite food.
