Ingredients for making pumpkin vegetables

1/2 kg pumpkin
1/2 teaspoon fenugreek seeds
1/2 teaspoon red chili powder
1 teaspoon coriander powder
2 tablespoons chopped coriander leaves
Oil
Mustard
Cumin
Turmeric powder
Salt
Sugar

Method of making pumpkin vegetables

Always use ripe pumpkins to make pumpkin vegetables. To prepare pumpkin vegetables, first cut the pumpkin and use a knife to remove its thick peel. Next, chop the pumpkin into small pieces and finely chop the green chillies and coriander leaves, setting them aside.

Now put oil in a pan and heat it on medium flame. When the oil is hot, add mustard seeds, cumin seeds, and fenugreek seeds and let them crackle for a few seconds. After this, add finely chopped green chillies and turmeric, and then add pumpkin pieces. Now, mix the pumpkin well with the spices. Cover the pan and let the pumpkin cook on medium flame for 5 minutes.

When the pumpkin becomes soft after cooking, add red chili powder, coriander powder, and salt as per taste in the pan and mix everything well. After this, cover the vegetable again and cook till the pumpkin becomes soft. Finally add sugar and coriander leaves to the pumpkin, mix well, and turn off the gas. Your delectable pumpkin has arrived.
