Every year, mothers observe Jiutiya Vrat to wish their children a long life, happiness, and prosperity. ‘Nahay-Khay’ kicks off this fast, followed by a 24-hour Nirjala fast. On this holy occasion, there is a tradition of making and eating some special dishes, such as Madua, i.e., Ragi roti, halwa, noniya saag, sarputia, and rice. Due to the rich nutrients in ragi, many people are now including it in their diet. If your Madua roti often turns out to be hard or breakable, then you can make soft and fluffy Ragi roti.

Here are some simple tips for making soft and fluffy Madua or Ragi roti.

1. Measure the flour correctly.

Use a vessel to measure the madua flour. For example, take a cup or two cups of flour and keep it aside. The correct measurement gives the roti a good texture.

2. Bring the water to the right temperature.

In a pan, heat the same amount of water as the flour. When the water gets hot, add a pinch of salt and half a teaspoon of desi ghee. Adding ghee will bind the dough well.

3. Use of desi ghee
Adding ghee to water helps in proper absorption of elements like vitamins A and K present in ragi in the body. It is important to know that vitamin A is a fat-soluble mineral, and the body needs fat to absorb it. Therefore, adding ghee to ragi flour is beneficial for health.

4. Cook the dough
On low flame, add ragi flour when the water starts boiling, add ragi flour to it on low flame. Make sure to thoroughly mix the flour with the water to ensure it fully absorbs the water. Once you have thoroughly mixed the flour and absorbed the water, switch off the gas.

5. Let the dough cool.
Place this dough onto a plate and allow it to cool slightly for easier handling. Apply a little ghee on the hands and knead the dough well.

6. Make dough balls.
After kneading, make small balls of dough. Roll each ball on a flat surface with your palms for 30-40 seconds until the dough is completely smooth.

7. Roll the roti and bake it on the pan.
Now, using the dry ragi flour, lightly roll the roti and put it on the hot pan. Make sure to let the roti cook for about 40 seconds after placing it on the pan, as it takes time to cook.

8. On both sides, cook the roti thoroughly.
When small bubbles appear in the roti, flip it and cook it well on the other side. Once both sides of the roti have cooked well, remove it from the pan and serve hot.

Ragi has health benefits.
Ragi, called’madua’ in Hindi, is considered a superfood. It is rich in fiber, calcium, and protein, which helps in strengthening bones. Moreover, ragi is gluten-free, making it ideal for those who are allergic to gluten.
