You need these ingredients

  • 4 slices of whole grain toast
  • 4 organic eggs
  • 4 slices of ham (preferably smoked)
  • 1 bag of leaf spinach
  • 1 bunch of spring onions
  • 1 romaine lettuce
  • 1 bunch of radishes
  • 1 bunch of leaf parsley
  • Apple cider vinegar
  • 1 lemon
  • 50 g salad mayonnaise
  • Salt, pepper
  • Paprika powder
  • Linseed oil

Preparation – and this is how it works

  1. Put a pot of water on the stove, bring it to a boil, and season lightly with apple cider vinegar.
  2. Crack the eggs and place them one at a time into cups. Then poach the eggs for about five minutes.
  3. Finely chop the washed lettuce and cleaned spring onions. Season the mayonnaise with lemon juice, salt, pepper, paprika powder, and linseed oil, and marinate the salad. Wash and chop the radishes, wash, pluck, and chop the flat-leaf parsley.
  4. Toast the toast, gently fry the ham and then briefly sauté the spinach in the same pan and season with salt and pepper.
  5. Now all you have to do is serve it: add the toast, ham, leaf spinach, then the poached warm egg, then the salad and finally the radish slices. When the toast is prepared, transfer it to a warm plate.

Assembling the Dish:

Layer the toast with ham, sautéed spinach, and a poached egg on top. Garnish with the fresh salad and radish slices for a satisfying, crunchy finish.
