Ingredients for making Gajar Ka Halwa:
1 kg carrots
600 grams sugar
8 to 7 cashews
5 to 10 almonds
Half a bowl of raisins
Half a teaspoon of cardamom powder
Half a teaspoon of fennel powder
One big bowl of ghee
One bowl of fresh cream
Method of making Gajar Ka Halwa:
Wash all the carrots thoroughly and clean them with a cotton cloth. When the carrots are well dried, grate them, put a cooker of three to five liters capacity on low flame and let it whistle for 7 to 8 times.
Add 5 to 6 teaspoons of ghee. When the ghee becomes hot, add the grated carrots and fry them on high flame.
As soon as the carrots are fried well, add sugar and half a teaspoon of cardamom powder and mix. Add one to two glasses of water and let it whistle for 6 to 7 times. Keep in mind that the flame should be medium otherwise the carrots may burn.
When the cooker whistles, add fresh cream and the remaining ghee and mix well. Fry the carrots and cream well until a pleasant aroma comes out of it.
Now in a separate pan, fry all the finely chopped dry fruits till they turn light golden and mix well in the carrot halwa. You can keep the thickness of the carrot halwa as per your liking.
