Ingredients to make Vegetable Khichdi:

Half cup rice

 

Half cup mixed lentils

 

One finely chopped onion

 

Half bowl finely chopped carrots

 

Half bowl finely chopped beans

 

Half bowl finely chopped tomatoes

 

Half bowl green peas

 

One teaspoon turmeric powder

 

One teaspoon chili powder

 

One teaspoon chaat masala

 

One teaspoon garam masala

 

Half bowl ghee

 

Salt according to taste

 

Finely chopped coriander leaves

 

Method to make Vegetable Khichdi:

Wash rice and lentils thoroughly and keep them in water for half an hour to swell.

Heat a three or five liter capacity cooker on medium flame. Add half bowl ghee in it and add finely chopped onion in ghee, fry the onion well. When the onion is fried well, add all the finely chopped vegetables in it and fry well. When all the vegetables are fried well, add all the ground spices in it and fry well.

Remove excess water from the rice and put the rice in the pressure cooker and mix well. Finally mix garam masala. Add two glasses of water and let the pressure cooker whistle twice. Finally add finely chopped coriander and one spoon of ghee to the khichdi and serve it.
