Ingredients for making stuffed bitter gourd:
500 grams bitter gourd
Two finely chopped onions
One finely chopped tomato
One teaspoon ginger-garlic paste
Two tablespoons mustard powder
One teaspoon kasuri methi
One cup oil
Two teaspoons dry mango powder
Fennel powder
Salt according to taste
Method of making stuffed bitter gourd:
To make stuffed bitter gourd, use only thick and fresh bitter gourd, this will make the vegetable even more delicious. Wash the bitter gourd thoroughly and peel it by scraping it with the help of a knife. Put half a teaspoon of salt in the bitter gourd and keep it for 15 minutes.
Cut the bitter gourd from the side but leave its other side attached, do not separate the bitter gourd completely. Remove all the seeds inside the bitter gourd and separate them.
Heat oil in a pan and apply turmeric and salt on all the bitter gourds, deep fry them and take them out.
In the remaining oil, temper with cumin seeds and asafoetida. Add chopped onion, chopped tomato and ginger garlic paste and fry well.
Add all the ground spices to the fried onion, add 2 to 3 spoons of water and fry the spices well. When all the spices are well mixed, take it out in a plate and let it cool.
