Kachori Making Tips: The name of crispy kachori makes your mouth water. Often we get bored of eating the same food and feel like eating something new. So today this recipe is for you which is easily prepared. For this you do not need to work hard. It is very easy to make and small children also like it very much.
Kachori originated from the Marwar region of Rajasthan in India. It is a deep fried spicy stuffed pastry. Although there are many types of kachori, today we will teach you to make a very simple and easy kachori.
Ingredients required for making Kachori:
Two cups of moong dal
One cup of flour
One teaspoon of baking soda
One teaspoon of ghee
One tablespoon of cumin seeds
Half inch ginger
Half teaspoon of asafoetida
4 to 5 green chillies
One teaspoon of garam masala
One to two teaspoons of poppy seeds
One teaspoon of red chilli powder
Half teaspoon of tamarind
Half teaspoon of sugar
Salt as per taste
Oil for frying
Method of making Kachori:
Grind two cups of moong dal well and heat a pan on gas. Add two teaspoons of oil in it and add asafoetida and cumin seeds. After the cumin seeds crackle, add finely chopped green chillies and fry well. When the spices are fried well, add the ground dal and mix. Stir for 1 to 2 minutes and also add turmeric powder, fennel, red chilli powder, garam masala and sugar and mix well. Let it fry for three to four minutes. Finally add salt according to taste and leave it to cool.
Take flour in a ball and add two spoons of ghee along with salt and baking soda and mix well. When ghee and baking soda are mixed well, prepare a soft dough by adding little water in it. Then keep it aside for 1 to 2 hours to set. Now make small balls of flour and fill them with the prepared filling. Fill all the kachoris and keep them together.
Heat oil in a large pan on the gas. When it is well heated, fry the kachoris well on medium flame. To make the kachoris even more crispy, deep fry them twice.
Now your crispy kachori is ready! You can serve it with sweet chutney and spicy chutney.
