Jardaloo Chicken Recipe: Jardaloo Chicken is an exquisite dish of Parsi cuisine in which succulent chicken pieces are cooked with the sweetness of dried apricots (zardalu) and a fine blend of spices. This dish is amazing not only in taste but also in aroma. People serve it on special occasions and festivals.

Jardaloo Chicken Recipe Material (for four people)

1 kg of chicken (chopped into small pieces).

2 tablespoons of oil

2 medium onions (finely chopped)

1 tablespoon of ginger-garlic paste

1 tablespoon of turmeric powder

1 tablespoon of red chilli powder.

1 tablespoon of cumin powder

1 tablespoon of cumin powder

2 tomatoes (finely chopped)

10to12 dried apricots (soaked and finely chopped)

1 cup water

Salt, to taste.

1 tsp garam masala

Fresh coriander leaves (for garnish)

Jardaloo Chicken Recipe Method of Preparation

1. Heat oil in a pan and fry onions.

Add 2 tablespoons of olive oil to a large skillet over medium heat. Add chopped onion and fry till it turns golden brown.

2. Preparing the base

Now add ginger-garlic paste and fry for 2 minutes. Then add the chicken pieces and fry till they turn light brown on all sides.

3. Add the spices.

Add turmeric powder, red chilli powder, coriander powder, and cumin powder. Make sure to thoroughly mix the spices into the chicken.

4. Add tomatoes and mix well.

Add the chopped tomatoes and cook until they are soft and the oil starts separating. Now add the soaked and finely chopped apricots and mix well.

5. Cook the chicken.

Add a cup of water and cover the pan. Cook it on a low flame for 20–25 minutes, until the chicken is completely tender and cooked.

6. Finish and set aside

Add salt and hot pepper to taste. Mix well and cook for another 5 minutes. Finally, garnish with fresh coriander leaves.

How to serve Jardaloo Chicken

Serve hot with steamed rice, naan, or fried chicken. This dish is enough to win everyone’s heart.

Tips:

Soak the apricots and use them to dissolve well in the chicken.

You can also add a little honey to enhance the taste.
