Ingredients-

1 cup brown rice (or basmati rice)
1 small onion, sliced
1 small tomato, chopped
1 carrot, diced
½ cup green peas
½ cup cauliflower florets
1 green chili (optional)
1 teaspoon ginger-garlic paste
1 bay leaf
2 cloves
1 small cinnamon stick
½ teaspoon cumin seeds
½ teaspoon turmeric powder
½ teaspoon garam masala
Salt to taste
1 tablespoon olive oil or coconut oil
2 cups water
Fresh coriander for garnish

Steps to Make Healthy Pulao –

1. Soak the Rice:
Wash the rice thoroughly. Soak the rice in water for 30 minutes. This softens the rice and makes it fluffy when cooked.

2. Saute Spices:
Put oil in a pan. Add cumin seeds, bay leaf, cloves, and cinnamon stick. Let them crackle for a few seconds. This gives the pulao a nice fragrance!

3. Saute Onions and Tomatoes:
Add onions. Saute until light brown. Add ginger-garlic paste and green chili (if using). Saute for a minute. Then add tomatoes. Saute until they are soft.

4. Add Veggies and Spices:
Add carrots, peas, and cauliflower. Mix well. Add turmeric, salt, and garam masala. Mix all of it well.

5. Add Rice and Cook:
Drain the rice that has been soaked. Add it to the pan. Mix gently so that the rice gets coated with the spices. Add 2 cups of water. Cover and cook on low heat for 15–20 minutes. The rice should be tender, and the water should be evaporated.

6. Serve and Enjoy
Switch off the heat. Keep the pulao aside for 5 minutes. Fluff the rice with a fork. Garnish with fresh coriander. Your healthy pulao is ready.
