Ingredients –
Bhindi (ladyfinger) – 500 grams
Oil – 3-4 tbsp, Cumin seeds – 1/2 tsp
Fennel seeds – 1/2 tsp
Asafoetida (asafoetida) – 1/4 tsp
Ginger (paste) – 1 tbsp
Green chilli (chopped) – 2 (according to taste)
Turmeric powder – 1/2 tsp
Coriander powder – 1 tsp
Cumin powder – 1/2 tsp
Red chilli powder – 1/2 tsp
Dry mango powder – 1/2 tsp
Black pepper – 1/4 tsp, Salt – as per taste
Green coriander – for garnishing.
Preparation of Bhindi –
Wash the Bhindi thoroughly and dry it. Make sure that there is no water in the Bhindi, as water can make the Bhindi sticky and it will not fry properly. Cut both the ends of the Bhindi and cut it into 2-3 pieces lengthwise.
Masala Tadka : Heat oil in a pan. When the oil is hot, add cumin seeds and fennel seeds. As soon as it starts crackling, add asafoetida. Now add ginger paste and green chillies and fry for 1-2 minutes, so that the raw taste of ginger goes away.
Adding ladyfinger : Now add chopped ladyfinger pieces and mix well. Then add turmeric powder, coriander powder, cumin powder, red chili powder, dry mango powder and salt. Mix these spices well on the ladyfinger and cover it and let it cook for 5-7 minutes.
Cooking : From time to time, mix the bhindi gently so that it does not burn. Let the bhindi cook on low flame for 15-20 minutes. If the bhindi dries up quickly, you can add some water, but keep in mind to maintain the juiciness of the bhindi.
Cook until fried: When the ladyfinger is cooked well and becomes crispy, add black pepper to it and mix. Now sprinkle green coriander and serve hot.
