Water as needed
For the filling

1 small onion chopped

1 tsp soy sauce
A pinch of salt and pepper

1 Make the dough
First take a bowl and mix the flour and salt Slowly add water a little at a time and start mixing Once it comes together knead the dough with your hands until its soft and smooth If it feels sticky sprinkle a bit more flour Cover the dough and let it rest for about 20 minutes This makes it easier to roll later
2 Prepare the filling
While the dough is resting lets make the filling Heat a pan with a little oil Add garlic and ginger and cook for a few seconds until it smells nice Then add the onions and cook until they turn soft Next throw in all the veggies and stirfry for 23 minutes You want the veggies to stay a bit crunchy Add soy sauce salt and pepper and give everything a good mix If you’re using paneer or tofu add it now Once done let the filling cool down
3 Shape the momos
