Ingredients:
You need to have easy ingredients for Suji Ki Jalebi-
Suji (semolina) — 1 cup
Curd (yogurt) — ½ cup
Water — 1 cup
Baking soda — 1 pinch
Sugar — 1 cup
Cardamom powder — ¼ teaspoon
Saffron strands (optional)
Oil or ghee for frying.
Preparing the Batter-
Take 1 cup of suji, ½ cup of curd, and 1 cup of water in a large bowl. Mix well to create a smooth batter. Add a pinch of baking soda and mix well. Keep the batter for 30 minutes. The resting time allows the suji to absorb the moisture, making the jalebis soft inside but crispy outside.
Making the Sugar Syrup-
While the batter is relaxing, prepare the sugar syrup. Boil 1 cup of sugar and ½ cup water in a pan. Add a few strands of saffron and ¼ teaspoon cardamom powder for extra flavor. Boil the syrup until it is a little sticky. Then, turn off the heat and let it warm.
Frying the Jalebis –
Heat ghee or oil in a pan. Press the batter into a piping bag or plastic bottle with a very small hole. Press batter into the hot oil, creating spiral shapes. Fry on a medium heat until the jalebis turn golden and crisp. Don’t overfill the pan.
Soaking and Serving-
Once fried, immerse the hot jalebis in the warm sugar syrup. Let them soak for 1-2 minutes so that they can absorb the syrup well. Take them out and serve hot. Suji Ki Jalebi tastes best when served hot and fresh.
