In this, leaving the traditional potato masala of Panipuri, tomatoes and fermented beans have been used. This is an experiment that is an attempt to combine the flavours of India and Thailand.

Coconut milk instead of tamarind water

In this fusion dish, coconut milk prepared in a special way has been added instead of tamarind water. This coconut milk gives a new deliciousness to Pani Puri.

Decoration with ants caught the attention

To make this Pani Puri even more special, the chef has decorated it with fire ants. These ants are found in Chhattisgarh, India and are known for their special sour taste. The sour taste of these ants gives this Pani Puri an unusual but attractive taste, which is a new experience for the eaters.

Chef Varun Totlani has described this recipe as ‘the perfect crossover of India and Thailand’. This dish has been prepared to show the combination of both countries’ culture and culinary art.
