Step 1: Preparing the Chenna

Firstly, boil 1 liter of milk in a large vessel along with saffron threads.
When the milk starts boiling, reduce the heat and let it cook for 10 minutes.

After this, add lemon juice to the milk and continue stirring until the curdles form.
After the milk curdles, strain it in a thin cloth (muslin) and wash the remaining chenna in cold water 2-3 times, so that the lemon smell goes away completely.

Squeeze the water from the chenna and knead it with the palm for 10 minutes to soften.
Add 1 tablespoon cornflour to the chenna and make small round balls.

Step 2: Preparing sugar syrup and raisins

Add 1 cup sugar and 1 cup water in a pressure cooker and heat it on low flame till the sugar dissolves completely.

Then add the chenna balls to the sugar syrup, close the cooker’s lid, and cook until 1 whistle.

Let the cooker’s pressure release on its own, then take out the rasgullas.

Step 3: Coating with khoya

Grate the khoya, then add half a cup of powdered sugar to it.

Now give a khoya coating to the prepared rasagullas. To achieve this, create small khoya balls, place them on the rasgullas, and cover them completely.

Now roll these khoya-covered rasgullas in dry coconut.
