Tomatoes – 3
Paneer cubes – 1.5 cups
Curd – half cup
Gram flour – 2 teaspoons
Garlic – 5 to 6 cloves
Onion finely chopped – 3
Green chillies – 4 to 5
Coriander leaves – 2 to 3 tablespoons
Garam masala – 1/4 tablespoon
Desi ghee – 2 teaspoons
Salt – according to taste
Coriander seeds – 1 tablespoon
Cumin seeds whole – 2 teaspoons
Garam masala – 1/4 teaspoon
Ghee – 2 teaspoons
Oil – 2 teaspoons
Bay leaves – 2 leaves
Kasuri methi – 1 teaspoon
Black pepper – 1 teaspoon
Cinnamon – 1 tablespoon
Prepare Dhaba-style paneer in these ways
To make a Dhaba-style paneer, first cut it into square pieces. Now you have to take a bowl and put the pieces of paneer in it. Mix two pinches of turmeric, red chilli powder, garam masala, and salt according to taste, and let the pieces of paneer marinate. Now, take a pan and heat two spoons of ghee in it. When the ghee melts, put the marinated paneer in small pieces. After this, take them out.
Now, take another pan and heat two spoons of oil and one spoon of ghee. After some time, add cumin seeds, crushed cardamom, cinnamon and other whole spices and fry them. When a mild aroma starts coming from them, add small pieces of onion. Keep frying till the onion becomes soft and golden. After this, add pieces of ginger and cloves to the pan and fry well.
Now fry this mixture for some time; mix two tablespoons of gram flour and spices. After frying on low flame for some time, add grated tomatoes and salt according to taste in the pan. Now cover the pan and cook the gravy till it leaves the oil. Add curd to the gravy, mix it, and cook for three to four minutes.
As soon as the gravy starts boiling, add kasuri masala and fenugreek to it. Now mix water in the sauce as per requirement and cook.
Finally, add fried paneer pieces and coriander leaves to this gravy, and turn off the gas. Let the paneer marinate for some time. Now serve it hot with paratha or roti and eat.
