Ingredients for Bathua Saag:
500 grams of Bathua
Half a bowl of finely chopped onions
One teaspoon of finely chopped garlic
One teaspoon of finely chopped ginger
One teaspoon of cumin seeds
Two to three whole red chillies
Half a teaspoon of turmeric powder
Half a teaspoon of chili powdr
Half a teaspoon of dry mango powder
Two tablespoons of oil
Salt according to taste
Method of making Bathua Saag:
To make Bathua Saag, first of all we will clean the leaves thoroughly and chop them finely and wash them with water once or twice. Now heat two teaspoons of ghee in a pan and add cumin seeds and dry red chillies to it. When the tempering crackles, add finely chopped ginger and garlic and fry for 1 to 2 minutes. When ginger and garlic are mixed well, add finely chopped onions and cook for 1 to 2 minutes.
When the onion is fried well, add all the ground spices to it and fry for 1 minute. When all the spices and onions are cooked well, add finely chopped bathua greens to it and cover and cook for 3 to 4 minutes. When the bathua greens release water, increase the heat and add half a teaspoon of salt. Fry on high flame for two to three minutes. When the water of the greens dries up completely, fry it for 1 to 2 minutes.
