Ingredients required for making Bharwa Baingan:
500 grams small brinjals
Half bowl of roasted peanuts
Two teaspoons cumin powder
Two teaspoons pickle masala
One teaspoon red chili powder
One teaspoon garam masala
One teaspoon turmeric powder
Two teaspoons white sesame seeds
Half teaspoon asafoetida
Two teaspoons mustard powder
Oil for frying
Salt according to taste
Method of making Bharwa Baingan:
First of all, wash and dry the small brinjals thoroughly. Cut all the brinjals into four pieces from the middle but keep in mind that the brinjal should not be separated completely, it should be cut in half only. This makes it easier to fill the masala. Mix turmeric powder, chili powder, coriander powder, garam masala and mustard powder in a vessel. Put two teaspoons of oil in a pan and add cumin seeds. Put the mixed masala in the pan and cook for three to four minutes. Now the stuffing of Bharwa Baingan is ready.
Prepare all the brinjals by stuffing them with some spices and heat oil in a pan. Fry two to four brinjals at a time on low flame. Fry all the brinjals and keep them aside. Your delicious stuffed brinjal is ready! Serve the stuffed brinjal with parathas or dal rice and enjoy it.
