Ingredients for making carrot barfi
2 kg carrots
10 to 12 cashews
5 to 6 cardamoms
8 to 10 pistachios
2 cups khoya
Half a bowl of ghee
2 cups of sugar
1 liter of milk
Method of making carrot barfi:
To make carrot barfi, first clean and dry the carrots thoroughly, and prepare a fine paste of carrot with the help of a mixer jar. On the other hand, heat milk in a pan and when the milk boils, add the grated carrots to it and cook it well on low flame for 10 to 15 minutes. When the milk becomes completely thick, add half a teaspoon of cardamom powder and mawa to it and mix well.
When the whole mixture becomes very thick, add a bowl of sugar to it and mix it. Keep stirring it for 5 to 10 minutes on medium flame. On the other hand, put half a teaspoon of ghee in a pan and cut cashews, pistachios and almonds into small pieces and fry them for two to three minutes. When the carrots are cooked, add fried cashews and almonds to it and mix well. Apply ghee on the bottom of a pan and take out the carrot halwa and spread it evenly. When it cools down, cut it into square shapes with the help of a knife and serve it.
