Ingredients for making Chana Dal Pakora Sabzi: 
One cup chana dal (soaked overnight)
One bowl of finely chopped onions
One bowl of finely chopped tomatoes
Two teaspoons ginger-garlic paste
Half a bowl of curd
Half a teaspoon coriander powder
Half a teaspoon turmeric powder
Half a teaspoon red chili powder (or to taste)
One teaspoon Kashmiri red chili powder (for color)
Half a teaspoon kasuri methi
One teaspoon garam masala
One teaspoon chicken masala (this is the secret! )
Four tablespoons ghee (desi ghee has a different taste!)
Half a bowl of oil
Salt to taste
Finely chopped coriander leaves (for garnishing)
Method to make Chana Dal Pakora Sabzi: 
Make the pakoras: First, soak the chana dal for 3-4 hours. When the dal swells, grind it coarsely in a mixer. Add finely chopped green chilies, turmeric, coriander powder and salt and mix well. Heat oil in a pan and make small pakoras and fry them till golden.
Fry the masala: In the same oil (reduce the oil a little) add finely chopped onion and fry till golden. Then add ground tomato and ginger-garlic paste and fry well.
Add spices: When onion-tomato is fried well and starts leaving oil, add coriander powder, turmeric powder, red chili powder and Kashmiri red chili powder and fry for 2-3 minutes.
Curd and gravy: Now add whipped curd and mix well. Add some water and let it boil.
Add pakoras: When the gravy starts boiling, add fried pakoras and cook on low flame for 2-3 minutes so that the pakoras absorb the gravy.
Ready!: Your delicious Chana Dal Pakora Sabzi is ready!
Serve: Lastly, garnish with finely chopped coriander leaves and a teaspoon of ghee and serve hot. Enjoy with roti, rice or paratha!
