Now heat oil in a cooker and add two bay leaves, two small cardamoms, two big cardamoms, 1 inch piece of cinnamon, half teaspoon cumin seeds and two dry red chilies in it. When the tadka crackles, add finely chopped onion and ginger-garlic paste and fry the spices well for 1 to 2 minutes.

Add all the ground spices to it and cook on a low flame for 1 to 2 minutes. When the spices and onion are fried well, add tomatoes and mix them. Add the water that we had soaked in the lentils, and let it whistle well on medium flame. When the whistle of the cooker blows, add two spoons of ghee and finely chopped coriander and mix it well. Your dal tadka is ready. Serve it with roti or rice.
