Ingredients required to make Bikaneri Barfi:
Two cups khoya (mawa)
One cup of powdered sugar
One teaspoon ghee
Half teaspoon cardamom powder
Two tablespoons oil
Two teaspoons saffron strands (optional)
Two teaspoons of jaggery powder (optional)
Easy way to make Bikaneri Barfi:
Firstly, heat a pan on medium flame. Then add khoya and powdered sugar and fry on low flame. Yes, fry on low flame only; do not rush! Fry for 3-4 minutes until the khoya is slightly fried. Then, pleas remove it from the pan and keep it in a vessel.
Now add ghee to the pan and continue to fry the remaining khoya. After about 10 minutes, when you see that the mixture has started drying a bit, reduce the flame to the lowest. Cook it for another 5-10 minutes on the lowest flame, and yes, keep stirring continuously so that it does not form lumps. Fry the mawa until it starts to come together.
When you feel the mawa has come together, please rn off the gas and keep it aside to cool. Mix it well like dough when the mawa cools down sufficiently and make round rolls.
Now, take a plate and grease it with a bit of oil. Place the mawa roll on the plate and pat it with your hands to spread it like barfi. Sprinkle finely chopped pistachios and saffron strands on it (if you want to add).
Cut the barfi in your favourite shape and keep it in the fridge to set for half an hour.
