1. Classic Tomato Soup
Ingredients:
500 grams ripe tomatoes (washed and chopped)
1 teaspoon finely chopped garlic
1/2 cup finely chopped onion
2 tablespoons butter
1 teaspoon sugar
1/2 teaspoon crushed black pepper
1 tablespoon fresh cream
4-5 mint leaves or coriander leaves (for garnishing)
Salt to taste
Method of preparation:
Heat butter in a pan and add garlic and fry it lightly.
Now add onion and cook it till it turns golden.
Add chopped tomatoes and salt, mix well and cook for 10 minutes.
When cooled, blend and strain it to get a smooth texture.
Now put this puree back in the pan, add a cup of water and add sugar.
Heat on low flame but do not boil.
Now add crushed black pepper and cream, mix well and turn off the gas.
For garnishing, add mint or coriander leaves on top and serve hot!
2. Creamy Mushroom Soup
Ingredients:
200 gms button mushrooms (washed and cut into slices)
2 tbsp butter
1 medium onion (finely chopped)
2-3 garlic cloves (finely chopped)
1 tbsp refined flour
1/2 tsp crushed black pepper
1 cup mushroom stock or water
1 cup full fat milk (at room temperature)
2 tbsp heavy cream
Salt to taste
Method:
Heat butter in a pan and add garlic and onion and fry till light golden.
Now add chopped mushrooms and cook till light brown.
When the water of the mushrooms starts drying up, add refined flour and mix well.
Add black pepper and then add mushroom stock or water and keep stirring.
Now add milk and cook for 4-5 minutes while stirring continuously.
When the soup starts thickening slightly, add salt and cream and mix.
Serve it in a hot bowl and garnish with coriander or mint leaves.
