Chicken 1 kg
2 tbsp. oil
Tomato puree, 1/2 cup
1 tbsp. garlic paste
1 tbsp. ginger paste
Cinnamon stick, 1 piece
1 tablespoon coriander powder
Bay leaf 1 leaf
Garam masala powder, 1 tablespoon
Kasuri methi powder 1 tbsp
2 1/2 cups of water
Onion, 2 onions
Salt to taste
Cumin seeds, 1 tsp
Dry red chili, 3 chilies
Lemon juice, 1/3 cup
1 teaspoon turmeric powder
1/2 handful of coriander leaves
Method:
Chicken preparation:
First, rinse the chicken thoroughly in running water and set it aside.
Marinate the chicken well with turmeric, salt, and lemon juice. Set it aside for 20-30 minutes to allow the spices to fully absorb.
Preparation of the curry:
Heat oil in a non-stick pan. Then add cumin seeds, cinnamon, and bay leaves. Fry the spices till the cumin seeds start crackling.
Now grind onion and water in a grinder to make a thick paste.
Add onion paste, ginger paste, and garlic paste to the pan. Fry for two minutes.
Now add tomato puree and fry for another 2 minutes. During this time, add salt and red chili powder according to taste.
Now add the marinated chicken pieces, cover the pan, and let it cook on low flame for 15-20 minutes. In between, keep checking the chicken to see if it is cooked well or not.
Final spices:
Add the garam masala, coriander powder, and kasuri methi after the chicken has cooked thoroughly. Mix all the ingredients well and cook for another 5 minutes.
Now turn off the gas and garnish the curry with fresh coriander leaves. Serve with hot rice or parathas.
