Ingredients for making Mutton Masala:
700 grams mutton
One tablespoon fennel
Two teaspoons of coriander powder
One teaspoon of turmeric powder
One teaspoon of chilli powder
One teaspoon Kashmiri red chilli powder
One teaspoon fennel
One teaspoon cumin seeds
One teaspoon cardamom
1 inch piece of ginger
One teaspoon chili
Finely chopped onion
One bowl of finely chopped tomatoes
Two tablespoons of ginger garlic paste
One teaspoon flour
Method of making Mutton Masala:
First of all, wash the mutton in cold water and dry it. Finely chop the onion, ginger and garlic.
Heat ghee in a pan or lagan and add cloves, black pepper, mace, bay leaf and cardamom.
Let the spices crackle so that their aroma comes out well.
After the spices are roasted, add ginger-garlic and cook for a few seconds.
Now add chopped onion and fry till it becomes golden brown.
When the onion is roasted, add mutton and mix it with the spices.
Saute it till the mutton turns light golden.
Now add paprika powder, mutton curry powder and coriander powder.
Saute the spices well while stirring for 5 minutes.
Then add mutton stock and cook for 2 hours on low flame.
When the mutton is cooked well and the gravy starts thickening, add curd, tomato puree and salt.
Cover it and cook for another 10-15 minutes.
When the curry is ready, add kewda and rose water and cook for another 10 minutes.
Taste and check the balance of spices.
Garnish the curry with coriander leaves and serve it with hot naan, rot, or rice.
