Delicious Aloo Kadhi Making Tips: During the nine days of Navratri, people eat different types of fruit food during fasting, such as buckwheat pakoras, sabudana khichdi, etc. But if you are bored of eating the same fruit food every day, then this time try Chatpati Aloo Kadhi. It is not only delicious to eat, but also gets ready quickly.

Ingredients:

Half a kilo boiled potatoes, peeled and mashed
2 teaspoons rock salt
¼ teaspoon red chili powder
½ cup water chestnut flour
Oil for frying
½ cup sour curd
A sprig of curry leaves
½ teaspoon cumin seeds
2 whole red chilies
1 tablespoon ginger, chopped
½ teaspoon coriander powder
4 cups water
Coriander leaves for garnish

Method of preparation:

First of all, make a thick batter by mixing potatoes, half a teaspoon salt, red chili powder and water chestnut flour in a vessel.
Now, keep aside ¼ of this batter and make pakodas from the remaining batter.

Then, mix curd and water in the remaining ¼ batter and whisk well to make a smooth batter.

Heat 2 tbsp oil in a heavy pan. Add tempering of curry leaves, cumin seeds and whole red chillies to it.

Now, add curd batter, salt and coriander powder to the pan and bring it to a boil.

When the batter starts boiling, reduce the flame. When the batter starts thickening, add pakodas to it and cook on low flame for a while.

When the curry is ready, garnish it with green coriander and serve hot.
