Using a ladle, pour a small amount of batter in the center of the pan. Quickly spread it in a circular motion to form a thin, even layer. Place it on medium heat and cook until bubbles appear.

It will automatically rise from the sides and turn golden brown in the center. You can then flip it over with the help of a spatula and cook it a little on the other side. Remove the dosa from the pan and serve on a plate. Serve with sambhar and coconut chutney.
