Ingredients for making Rabdidar Sabudana Kheer
Sabudana: 1 cup
Milk: 1 liter
Sugar: 1/2 cup
Milk powder: 1/4 cup
Cardamom powder: 1 teaspoon
Dry fruits of your choice: 1/4 cup
Method of making
Wash and soak the sabudana:
First of all, wash the sabudana thoroughly with water to remove its starch.
Now soak it in 1 liter of milk and leave it for 4-5 hours. This will make the sabudana swell well in the milk.
Make the caramel:
Place a pan on the gas and add sugar to it.
Melt the sugar on low flame, keep stirring so that it does not burn.
When the sugar melts and turns into caramel, add milk slowly.
Keep stirring continuously so that there are no lumps.
Thicken the kheer:
Now add milk powder to it and mix well.
Add soaked sabudana and cook for 5-7 minutes.
Add cardamom powder and mix.
Dry Fruit Tadka:
Heat ghee in a pan and roast the dry fruits in it.
Add these dry fruits to the kheer and mix.
