Kaju Curry: Kaju curry is a Punjabi dish that people like to make on special occasions. Often people go out to eat and order kaju curry. It is a perfect dish for festivals or special occasions like birthdays or anniversaries.

Ingredients for making cashew curry:
Two cups of cashew nuts
Two large onions
Puree of two tomatoes
1 inch cinnamon stick
Half bowl of fresh cream
One to two finely chopped green chillies
One tablespoon turmeric powder
Half tablespoon cumin powder
Half tablespoon red chilli powder
Half teaspoon Kasuri methi
Half cup fresh cream
Finely chopped coriander leaves
Salt according to taste
Method of making cashew curry:
Heat two tablespoons of ghee in a pan, add cashew nuts and fry well on medium flame till they turn light brown. When the cashew nuts are fried well, take them out and keep them in a plate. Heat two tablespoons of oil in the same pan on medium flame. Add a piece of cinnamon, chopped onion, garlic-ginger paste and fry. After the onion is lightly fried, turn off the gas.
When this mixture cools down, make cashew and tomato puri. And put 8 to 10 roasted cashews in a small mixer jar and grind them till they become fine powder. Make a good paste of roasted onion, ginger and garlic in this jar.
Put two tablespoons of ghee in the same pan and add onion puri, fry for 2 to 3 minutes and mix the whole cashews well. Add half a bowl of fresh cream in the mixture and stir. Mix all the remaining cashews well in it.
Finally add half a teaspoon of Kasuri Methi and add salt according to taste and cover and cook for 5 to 6 minutes.
