Lauki 500 grams
Curd 2 cups
Mustard oil two tablespoons
Turmeric powder 1/2 teaspoon
Red chilli powder 1/2 teaspoon
Coriander powderone1 teaspoon
Asafoetida 1 pinch
Cumin seeds 1/2 teaspoon
Ginger-garlic paste one teaspoon
Tomatoes (finely chopped) 2 large
Curry leaves 8-10 leaves
Sugar 1/2 teaspoon
Salt to taste
Method to make Lauki Curry
Step 1: Cook the Lauki
First of all, peel the lauki and cut it into small pieces.
Put lauki, salt and turmeric in the cooker and let it whistle 2-3 times.
After the cooker cools down, take out the lauki.
Step 2: Prepare the curd and lauki paste
Add 2 cups of curd to the cooked lauki and blend it well.
If you don’t have a blender, grind it in a mixer.
Step 3: Prepare the masala
Heat mustard oil in a pan.
When the oil is hot, add cumin seeds and asafoetida.
Add curry leaves and fry lightly.
Now add ginger-garlic paste and fry a little.
Cut tomatoes into small pieces, add them, and cook on low flame.
Add turmeric, red chilli and coriander powder to it.
Step 4: Prepare the curry. Add the prepared curd and bottle gourd paste when the oil separates from the mass.
If the paste is too thick, add some water and stir.
Cook till the curry comes to a boil.
Step 5: Balance the sweetness in the curry
Finally, add half a teaspoon of sugar and mix well.
Your delicious bottle of gourd curry is ready.
