Lauki ki sabji is made in many ways. Some people make it by just tempering it, some by adding mild spices, and in some places it is also made with gram.

Ingredients for making spicy gourd vegetable:

500 grams bottle gourd

Two finely chopped onions

Two finely chopped tomatoes

Two teaspoons ginger garlic paste

One teaspoon Kashmiri red chilli

One teaspoon turmeric powder

One teaspoon coriander powder

One teaspoon garam masala powder

One teaspoon salty cumin seeds

Half teaspoon mustard seeds

One teaspoon vegetable masala

One teaspoon chicken masala

Finely chopped coriander leaves

Half cup oil

Method of making bottle gourd vegetable:

First of all, peel the bottle gourd well and chop it finely. Heat 5 to 6 teaspoons of oil in a cooker and add half teaspoon cumin seeds and let it crackle. As soon as it crackles, add finely chopped onion and ginger garlic paste and fry well.

When the onion is fried well, add all the ground spices and finely chopped tomatoes and mix well. After the onion and spices are cooked well, cover and cook finely chopped bottle gourd dal for 5 minutes.

Finally add one spoon of garam masala and one spoon of chicken masala and cook for three to four whistles. Add finely chopped coriander leaves and serve the spicy gourd vegetable with rice-dal, puri paratha or your favorite food.
