Amritsari Aloo Ki Launji Recipe: If you want to eat something spicy and delicious for breakfast, Amritsari Aloo Ki Launji is a great option. It is not only easy to make, but also tastes amazing. Once you taste this recipe, you will want to eat it again and again.

Ingredients:

300 gms boiled and peeled potatoes

2 tbsp oil

1 tsp fennel seeds, coarsely ground

¼ tsp fenugreek seeds, coarsely ground

½ tsp nigella seeds, coarsely ground

1 whole big cardamom, coarsely ground

¼ tsp asafoetida

1 tsp grated ginger

2-3 green chillies, chopped

2 tsp coriander powder

2 tsp Kashmiri red chilli powder

½ tsp turmeric powder

1 tsp salt

2 tsp tamarind paste

2 tsp powdered jaggery

Method of preparation:

Firstly, peel the boiled potatoes and mash them roughly with your hands.
Heat oil in a pan on medium flame.

Once the oil is hot, add fennel seeds, fenugreek seeds, nigella seeds, black cardamom and asafoetida and let everything crackle for about 5 seconds.

Now add ginger and green chilies to the pan and fry for 10 seconds.

Add mashed potatoes to the pan and mix everything well.

Add coriander powder, Kashmiri red chili powder, turmeric powder and salt to the potatoes and cook for another minute.

Add 2 cups of water to the pan, cover and cook on medium flame for 5-6 minutes.

Remove the lid of the pan and add tamarind paste and jaggery and cook for another 5 minutes.

Keep the gravy thin. Check for salt before serving.

Your delicious and spicy Amritsari Aloo Ki Launji is ready. Serve it hot with puri or paratha.
