Matar Kachori Making Tips: If you want to eat something hot and crunchy, then there is nothing better than crispy pea kachori! Ingredients required to make Matar Kachori
(For 4-5 people)
For kneading dough:
2 cups wheat flour
1 cup refined flour (to make kachori more crispy)
2 tbsp oil (for kneading)
1/2 tsp salt
Water (for kneading)
For stuffing:
2 cups green peas (fresh or frozen)
1 inch ginger (chopped)
2 green chillies (finely chopped)
1/4 tsp asafoetida
1/2 tsp coriander powder
1/2 tsp garam masala
1/2 tsp fennel powder
Salt to taste
2 tbsp oil
For frying:
Oil as required
Easy method to make Matar Kachori
1. Prepare the dough
Sift the flour and refined flour in a large bowl.
Add 2 tablespoons oil (moyan) and salt and mix well.
Now add water little by little and knead a soft dough and keep it covered for 15-20 minutes.
2. Prepare the stuffing
Boil the peas lightly in water (if they are fresh then 5-7 minutes, if they are frozen then 2-3 minutes are enough).
Strain the boiled peas and grind them coarsely in a mixer with ginger and green chillies.
Heat 2 tablespoons oil in a pan, add asafoetida and pea paste.
Now add coriander powder, fennel powder, garam masala and salt and fry on low flame for 5-7 minutes.
When the mixture dries up and is lightly roasted, turn off the gas and let it cool.
3. Roll and fry the kachori
Make small balls of dough and roll them to flatten slightly.
Now place 1-2 spoons of prepared pea filling in the middle.
Lift the dough from all sides, close it well and roll it lightly.
Heat oil in a pan and when the oil is well heated, fry the kachoris on medium flame.
When the kachoris become golden brown and crispy, take them out on tissue paper.
