Ingredients to make Medu Vada:
250 grams urad dal
Half a bowl of finely chopped onion
Half a teaspoon of cumin powder
Half a teaspoon of black pepper powder
3-4 finely chopped green chillies
1 inch piece of ginger
A pinch of asafoetida
Finely chopped coriander leaves
500 grams of oil
Method to make Medu Vada:
First of all, to make Medu Vada, wash the lentils thoroughly and soak them for three to four hours. When the urad dal swells well, put it in the mixer grinder jar and grind it coarsely. Add finely chopped onion, finely chopped ginger, finely chopped green chillies, and all the ground spices to the ground lentils and mix well.
Finally, add a pinch of asafoetida and finely chopped coriander leaves and mix and keep it aside for 5 to 6 minutes to set.
Put a pan on the gas and heat it by adding oil. When the oil is well heated, apply water on your hands and make small medu vadas and fry them on medium flame. Keep in mind that the flame should not be too high because then the medu vadas will remain crunchy from outside and raw from inside.
Prepare all the medu vadas in this way and serve them with coconut chutney, peanut chutney or chutney of your choice. You can enjoy it with evening snacks. This is a very good option for evening snacks.
