First of all, prepare the gram flour batter to make Motichoor Laddu. Take 2 cups of coarse gram flour in a vessel, sslowly add1/2 cup water, aand makea thin lump-free batter.
Add 1-2 drops of orange food colour and saffron threads to this solution and mix well. Then cover this solution and keep it for 10 minutes.
After this, prepare to fry the boondi. Heat ghee in a deep pan. Use a ladle (jhaari) with a small hole to make boondi.
Place the ladle over the hot ghee and pour the gram flour solution into it so tiny round drops fall into it.
Fry these drops for 1-2 minutes till they turn golden. Remove them from the ghee when they turn light golden, and place them on tissue paper to absorb the extra ghee.
Now it is time to make the syrup. Add one and a half cups of sugar and 1 cup of water to a pan and heat it on a medium flame. Keep stirring continuously till the sugar dissolves in the water.
When the sugar dissolves completely, cook for 5-7 minutes and make a one-string syrup. One string syrup means that when you take a drop of syrup between two fingers and separate it, a thin string should form.
Once the syrup is ready, add lemon juice, cardamom powder and saffron, mix well and turn off the gas.
Add the fried boondi to the hot syrup and mix well so that the boondi absorbs the syrup.
Let this mixture cool down a little for 10-15 minutes.
