Ingredients for making Mutton Curry:
500 grams mutton
Half cup finely chopped onion
Half cup finely chopped tomato
Half cup curd
50 grams ghee
One cinnamon stick
Two big spoons ginger garlic paste
Two whole cardamoms
Two big cardamoms
One spoon cumin seeds
Two bay leaves
Dry red chilli
One spoon turmeric powder
One spoon chili powder
One spoon coriander powder
One spoon kasuri methi
Two big spoons mutton masala
Half cup mustard oil
One spoon garam masala
Salt according to taste
Finely chopped coriander leaves.
Method of making Mutton Curry:
First of all we will marinate the mutton. For this, we have to clean the mutton thoroughly and keep it in a big vessel. Add two spoons of oil, half spoon turmeric, half spoon chili, one spoon ginger garlic paste and half spoon salt and mix well. Keep it for marinating for half an hour.
Now heat two tablespoons of ghee in a pressure cooker and add half a teaspoon of cumin seeds, two whole cardamoms, two small cardamoms and 1 inch cinnamon stick and temper it. As soon as the tempering crackles, add finely chopped onion and two teaspoons of ginger garlic paste and fry it well. As soon as the onion is lightly fried, add all the ground spices and stir it well. When the aroma of the spices starts coming, add half a cup of beaten curd and fry for 1 to 2 minutes.
When oil starts coming out of the spices, add finely chopped tomatoes and stir it. When all the spices are fried well and a pleasant aroma starts coming, add marinated mutton and fry it on high flame for 4 to 5 minutes. When the mutton is fried well, add one teaspoon of garam masala and two tablespoons of mutton masala and stir it.
