What is required to make Mutton Nihari?
Mutton: 500 grams
Fennel: 1 tablespoon
Coriander powder: 2 teaspoons
Turmeric powder: 1 teaspoon
Chilli powder: 1 teaspoon (according to your taste)
Kashmiri red chilli powder: 1 teaspoon (for colour)
Fennel: 1 teaspoon
Cumin: 1 teaspoon
Cardamom: 1 teaspoon
Ginger:1-inch piece
Mace: 1 teaspoon
Green chilli: 1 bowl (finely chopped)
Onion: 1 bowl (finely chopped)
Tomato: 1 bowl (finely chopped)
Ginger-garlic paste: 2 tablespoons
Wheat flour: 1 teaspoon
Oil: as per taste
Salt: as per taste
Easy way to make Mutton Nihari:
First, we will use roasted mutton to make Mutton Nihari—heat oil in a heavy bottom pan.
WAddfinely chopped onions and fry until golden brown when the oil is hot. Then add ginger-garlic paste and fry for 2 minutes.
Add the marinated mutton and fry on high flame for 7-8 minutes until it changes colour slightly.
Then add coriander powder, turmeric powder, chilli powder, Kashmiri red chilli powder, fennel seeds, cumin seeds, cardamom, mace and salt and mix well. Fry the spices for some time.
When the mutton is well fried with the spices, add some water and let it cook on low flame.
Lightly fry the wheat flour and mix it with a cup of water to make a thin batter.
When the mutton is cooked, add the flour batter and cook for 10-15 minutes, stirring continuously, so the Nihari thickens.
