Ingredients for making Paneer Kolhapuri:
250 grams of paneer
Two chopped onions
Two chopped capsicum
Finely chopped green chillies
One teaspoon ginger garlic paste
One teaspoon chili flakes
Half teaspoon turmeric
Half teaspoon coriander
Half teaspoon garam masala powder
One teaspoon Kasuri methi
Two tablespoons curd
Three to four tablespoons oil
Salt according to taste
Method of making Paneer Kolhapuri:
First of all cut the paneer into small pieces. Then add two pinches of turmeric and two pinches of salt to it, mix it well and keep it aside. Now heat a pan. Add two tablespoons of oil to it and temper it with half a teaspoon of cumin seeds. When the tempering crackles well, add chopped onions and capsicum to it and fry for 2 to 3 minutes.
Now add all the ground spices to the curd kept in a bowl, mix it well and keep it aside for 1 to 2 minutes to set. This will make the spices swell well and its taste doubles. Now when the onion and capsicum are fried well, add the beaten curd mixture to it and fry well for 2 to 3 minutes. When the oil starts oozing out, add the marinated paneer to it and add two tablespoons of water and mix well. Cook on high flame for 1 minute and finally add the Kasuri Methi.
