Ingredients required to make Paneer Kolhapuri:

Paneer – 250 gms

Tomato paste – [specify quantity, like 2-3 medium size tomatoes]

Dried coconut – 2 tbsp

Oil – 2 tbsp

Cashews (ground) – 4-5

Ginger – 1 tsp (paste or grated)

Green chilies – 2-4 (according to your taste)

Oil – 2-3 tbsp (for cooking)

Cumin seeds – 1/2 tsp

Red chili powder – 1/2 tsp (or as per taste)

Turmeric powder – 1/2 tsp

Coriander powder – 1/2 tsp

Salt – as per taste

Easy way to make Paneer Kolhapuri:

Firstly, heat 1 tbsp oil in a pan. Add dried coconut, 2 tbsp oil, cashews, cumin seeds, fennel seeds, black cardamom, cloves and black pepper.

Roast them on low flame till the spices turn light golden and start giving out a nice aroma. Once they are roasted, take them out in a plate and let them cool.

Now grind the roasted spices to make a powder.

Add some water to the tomato paste to dilute it (if the paste is too thick).

Heat 2 tbsp oil in a pan and add tomato paste and fry it well.

When the spices start giving out a light aroma, add cashew paste and fry for 2-3 minutes.

Now add red chilli powder and mix well.

To prevent the gravy from thickening, add half a cup of water and mix on low flame.

Finally, add small pieces of paneer and cover the pan and cook for 5-10 minutes.

Turn off the gas and add finely chopped coriander leaves and mix.

Serve hot paneer kolhapuri with roti, kulcha or paratha and enjoy! It really tastes delicious!
