Ingredients:
2 cups boiled rice
3 cups mixed veg (capsicum, carrots, beans, peas, cauliflower)
1/4 cup onion, finely chopped
2 green chillies, finely chopped
1 tsp ginger, finely chopped
1/4 tsp garlic, finely chopped
1 tsp lemon juice
1/2 cup coriander leaves, finely chopped
1 tsp cumin seeds
2 tsp coriander powder
1/2 tsp garam masala
1/2 tsp red chilli powder
1 tsp biryani masala
1/2 tsp turmeric powder
Salt to taste
2 tsp desi ghee or oil
Method of preparation:
First of all, finely chop onion, green chillies, ginger, garlic and vegetables.
Heat ghee or oil in a pan, add cumin seeds and fry.
Now add onion, garlic, ginger and fry the onion till it becomes light golden.
Add chopped vegetables and fry for 5 minutes.
Add turmeric, red chili powder, coriander powder, garam masala and biryani masala and fry for 2 minutes.
Add salt as per taste and cook for 2 more minutes.
Add boiled rice and mix gently so that the rice does not break.
Add lemon juice on top, cover and cook on low flame for 5-7 minutes.
Garnish the prepared biryani with green coriander and serve hot with raita, pickle or chutney.
