Ingredients for Veg Pulao:
Two cups of rice
Half cup of finely chopped onion
Half cup of finely chopped carrot
Half bowl of peas
Half cup of finely chopped beans
Half bowl of finely chopped tomato
One teaspoon of turmeric powder
One teaspoon of coriander powder
One teaspoon of chili powder
One teaspoon of garam masala
One teaspoon of biryani masala
Finely chopped coriander leaves
Salt according to taste
Two tablespoons of ghee
Method of making Veg Pulao:
To make Veg Pulao, first soak the rice in water for half an hour. This will make the rice very fluffy. Now heat two tablespoons of ghee in a pressure cooker. Let two bay leaves and half teaspoon of cumin seeds crackle in the ghee. When the cumin seeds crackle, add all the vegetables and fry for 1 to 2 minutes. When the vegetables are lightly fried, add all the ground spices and fry for 2 to 3 minutes.
When the aroma starts coming from the spices, add finely chopped tomato and salt according to taste and mix. When the spices and vegetables are mixed well, add soaked rice to it and fry for 1 minute on high flame. When all the vegetables and rice are mixed well, add two glasses of water and let it whistle. Keep in mind that the whistle of the cooker should come out automatically. Do not let it come out otherwise the rice will remain uncooked. When the whistle comes out automatically, add one spoon of ghee and finely chopped coriander to it and serve. You will prepare this Vegetable Pulao very quickly, serve it with Raita.
