For the filling of water chestnut flour samosas:
One cup chironji soaked in water for two hours
¾ tsp chironji powder
1 tbsp cumin seeds
2 tsp coriander
2 tsp rock salt
1/2 tsp cardamom
2 tbsp ghee
Method to make water chestnut flour samosas:
To make water chestnut flour samosas, first prepare the filling. For this, grind the chironji in a mixer and keep it aside.
Now, heat two tbsp ghee in a pan. Add cumin seeds to the ghee, add chironji and the rest of the stuffing and fry on low flame. After this, keep the stuffing aside to cool.
After this, to knead the samosa dough, first boil water, ghee and a teaspoon of salt in a pan.
Add flour and arrowroot, mix well, and cook on low flame when it boils. When this mixture starts gathering in the middle, please remove it from the flame and keep it aside to cool.
After this, make a dough about 1/8 inch thick and roll it. Now, wet the edges and cut it in half from the middle. Fold it like a cone in a round shape, fill the stuffing material and close it from above.
Now, heat the ghee in a pan, add samosas to it, and fry it on medium flame until the samosa becomes golden.
Serve hot samosas with green chutney.
