Ingredients for making Dahi Vada

Urad dal (1 cup)
Curd 2 cups (whipped)
2-3 green chilies (chopped)
Ginger (grated) 1 inch piece
Asafoetida, 1 pinch
1/2 tsp. cumin powder
Chili powder is red. 1/2 tsp
Sweet chutney, 2 tbsp
Green chutney, 2 tablespoons
Salt to taste
Oil for frying

Method of making Dahi Vada

1. Soak and grind urad dal
First of all, soak urad dal in water for 4-5 hours. After that, filter the lentils through a sieve and grind them finely in a mixer with some water. Mix this ground lentil well with salt, asafoetida, and chopped green chilies.

2. Fry the Vadas

Now make small balls (vadas) from this mixture and deep fry them in hot oil till they become golden brown. Once the vadas turn golden, remove them from the oil and immediately put them in hot water. Leave them for 10 minutes. This will make the vadas soft.

3. Prepare curd

Meanwhile, whisk the curd well and add salt, cumin powder, and red chili powder to it according to taste. If desired, dilute the curd with water to ensure optimal absorption in the vadas.

4. Put the vadas in curd

Squeeze the vadas soaked in water lightly to remove the water and put them in the whipped cream. Leave it for 15-20 minutes so that the curd flavor dissolves well in the vadas.

5. Add chutney and spices.
Now pour sweet chutney and green chutney over the vadas. After this, garnish with some more cumin powder, red chili powder, and coriander leaves.
