Egg Biryani

Basmati rice 2 cups
Boiled eggs 6
Bay leaf 1
Cardamom 2
Cloves 2
Green chilli 1 (chopped)
Black pepper 1/4 teaspoon
Chopped onion 2
Chopped tomato 3
Grated ginger one-piece
Turmeric powder 1/2 teaspoon
Red chilli powder 1/2 teaspoon
Cumin powder 1/2 teaspoon
Coriander powder 1/2 teaspoon
Garam masala one teaspoon
Coconut milk 2 cups
Water 1.5 cups
Ghee 5 teaspoons
Coriander leaves 1/2 cup
Mint leaves 1/2 cup
Method of preparation:
Peel the boiled eggs and chop them thinly.
Heat the pressure cooker, add ghee, bay leaf, cardamom, cloves, black pepper, and fry.
Now add onion, ginger and garlic and fry till golden.
Add turmeric and red chilli powder and cook for a few seconds.
Add tomatoes and cook till they soften.
Add spices like cumin powder, coriander powder and salt and fry.
Add coconut milk and garam masala, then add eggs.
Wash the rice and add coriander and mint to it.
Put the rice in the pressure cooker and turn off the gas after three whistles.
Let the steam escape on its own, then serve the biryani.
Egg Masala Fry

Ingredients Required:
Ingredients Quantity
Boiled eggs 4
Red chilli powder 1.5 tsp
Salt 1/2 tsp
Coriander powder 3/4 tsp
Turmeric powder 1/4 tsp
Curry leaves 6
Urad dal 1 tsp
Oil as required
Method of Preparation:
Cut the boiled eggs in the middle.
Mix the spices and apply them evenly on the eggs.
Heat oil in a pan; add urad dal and curry leaves.
Now cook the spiced eggs on low flame for 5 minutes on both sides.
Transfer to a plate and serve hot.
Egg Manchurian

Garlic (chopped) 4 cloves
Onion (chopped) 1
Spring onion (chopped) 4 sticks
Green chillies (chopped) 4
Soya sauce 2 tbsp
Red chilli sauce 1 tbsp
Vinegar 1 tbsp
Sugar 1/4 tbsp
Salt to taste
Oil as required
Method:
Peel the eggs and keep them aside.
Heat oil in a pan and, add onions and cook till soft.
Add garlic, green chillies and spring onions and mix.
Add soya sauce, red chilli sauce, vinegar, sugar and salt and mix.
Add eggs and coat them well in the gravy.
Cook for 5 minutes and serve with fried rice.
